If it were up to my girls, we would eat pancakes for breakfast EVERY.MORNING. But as a breastfeeding mama to a rapidly growing 5 month old, I need a heartier breakfast, with higher protein content, in my first meal of the day. With Quaker® Real Medleys SuperGrains Granola, I can add a protein boost to blueberry pancakes that makes all of us happy!
Whole Grain Blueberry Pecan Granola Pancakes
Just by adding 1/2 a cup of Quaker® Real Medleys SuperGrains Granola to my regular whole grain pancake batter, I turn a boring breakfast into a protein, fiber and flavor-filled meal that keeps my normally ravenous self full well through lunch. Real Medleys SuperGrains Granola features a special blend of seven super grains and seeds, fruits & nuts which provide fiber, ALA omega-3 and whole grains. The seven grains include Whole Grain Oats, Whole Grain Wheat, Flaxseed, Red Quinoa, Sunflower Seeds, Amaranth and Barley. And for our blueberry pancakes, we chose the Blueberry Pecan variety. It smells amazing as soon as you open the bag!
Add a protein, fiber and flavor-filled punch to your blueberry pancakes with Quaker® Real Medleys SuperGrains Granola.
Ingredients
1 cup Whole Grain Pancake Mix
1 cup Milk
1 TBSP Vegetable Oil
1 Egg
1/2 cup Quaker® Real Medleys SuperGrains Granola Blueberry Pecan
Greek Yogurt
Fresh Blueberries
Honey
Instructions
Place griddle on stove and heat it while you prepare pancake mix.
Combine whole grain pancake mix with milk, vegetable oil and egg. Whisk thoroughly.
Fold Quaker® Real Medleys SuperGrains Granola Blueberry Pecan into pancake batter.

Pour 1/4 cup of batter onto hot griddle.

Flip when bubbles emerge on top (2-3 minutes), and cook another 2-3 minutes, or until cooked through.

Blueberry Pancakes – Yum!
Skip butter and syrup and top off your short stack with a scoop of Greek yogurt, some fresh blueberries and a drizzle of honey for a hearty, nutritious and delicious breakfast the whole family will love!

Hi I was wondering if you knew calories per pancake?
Hi Christine, I don’t since it will vary depending on what specific pancake mix you use, whether you use whole milk vs. skim milk, etc. Since I’m currently breastfeeding, I struggle to eat ENOUGH calories every day. The granola is also high in protein, which is higher calorie, but nutrient-rich calories.
