Recently we made the move from a mac and cheese every other night family to real food, made by real people every night family.  And we haven’t looked back. Turns out you can still make quick weeknight recipes for your family AND still serve real food too.

Why We Made the Switch

I love food. I love to experiment in the kitchen, and I love the feeling of accomplishment and gratification I get when I make something delicious that pleases my dinner guests and my family.  It was pretty easy to please my children if I made mac and cheese every other night for supper, and filled in the other evenings with pancakes, or pizza, or chicken fingers.  I could fairly easily turn those meals into something a little more interesting for my husband and I – but I was getting bored.  Creating supper was no longer fun and exciting – it was about as stimulating as doing the laundry.

How We Made the Switch

I was pretty sure any aversions my kids were having regarding vegetables and ‘new’ foods were just habits that I had let develop and grow out of control. My plan was to cook healthy meals, easy enough to pull together even during the week, that were still tasty and I enjoyed.  If I truly enjoyed it, I could honestly say to my children that it tastes good.  If it was easy to prepare, I wasn’t slaving in the kitchen for any length of time just to be discouraged by a chorus of ‘I don’t like it….’. If it was healthy too, it felt really good to ditch that mac and cheese.  My plan was to kick our picky eater habits to the curb, and replace them with healthy eating habits.

How We Made it Work

We give small servings, so as not to overwhelm.  Seconds are always available.  Having the children eat small servings of a new food, is better than having them eat none of it.  Be consistent in your attitude and approach.  Cook a variety of foods, and note which ones are a success.  We have had big success with this 20 Minute Shrimp and Pasta Pot.

20 Minute Shrimp and Pasta Pot

This recipe is the definition of quick weeknight recipes. It takes 10 minutes to prepare – that’s ten minutes to gather the ingredients, chop tomatoes and crush garlic.  And then ten minutes to cook. 3/4 lb pasta
2 tomatoes – chopped
2 cloves garlic – crushed
1 can of diced tomatoes – 14 oz
1-2 tbsp dried basil
1-2 tsp salt
2 cups water
1 lb cooked, thawed shrimp
2 cups of peas
1 cup of crumbled feta

Directions
Place your pasta in the pot, along with the can of diced tomatoes (with the juice), the chopped fresh tomatoes, the crushed garlic, the basil and the salt.
Add the water, and cook on med high for about 8 minutes.  Stir occasionally.
Add peas and shrimp for the last two minutes of cooking. Remove from heat, and either stir in the crumbled feta or add it as a topping to the pasta dish once it is transferred to a serving dish.

20 Minute Shrimp & Pasta Pot

With just one pot and 20 minutes, you can have this Shrimp and Pasta Pot on the table! A quick weeknight recipe your family will love.

Ingredients

3/4 lb pasta

2 tomatoes - chopped

2 cloves garlic – crushed

1 can of diced tomatoes – 14 oz
