With 3 kids 4 and under, including a 2 week old newborn, the ONLY way I am serving up dinner these days is with my slow cooker. We would be starving or living on delivery without it. One of my go-to favorites is Slow Cooker Chicken Tacos. With the help of RO*TEL, it literally takes 30 seconds to prep and requires only two ingredients. Read through to the end to see how you can double or triple the recipe and turn it into 3 meals!
Slow Cooker Chicken Tacos
Texas born and raised, I could eat Mexican food 24/7. Living in New England, however, makes good Mexican food extremely hard to come by, and I’ve learned I am better off making it myself. Every house has something they always have in the pantry – at our house, it’s RO*TEL. Using RO*TEL in my homemade Mexican food helps me get the authentic Tex-Mex flavors I’m looking for and fulfills my taste for home!
Key Ingredients
For my Slow Cooker Chicken Tacos, I headed to Wal-Mart to restock my favorite Tex-Mex ingredient, RO*TEL. You can find it in the pasta and canned tomatoes aisle.
I add the RO*TEL to boneless chicken thighs in my slow cooker during naptime, and it’s ready to serve as chicken tacos for dinner. I prefer thighs to breasts – they have more flavor and are a less expensive cut of meat. Win, win!
Ingredients
1 1/2 pounds boneless, chicken thighs
1 10 ounce can Original RO*TEL
Whole wheat tortillas
Avocados
Lettuce
Refried beans
Shredded cheese
Instructions
Spray inside of your slow cooker with non-stick cooking spray.
Add boneless chicken thighs.
Top with 1 can of RO*TEL per 1-1 1/2 pounds of chicken.
Cover and set slow cooker to High for 4 hours.
When chicken is done, use 2 large forks to shred chicken. Recover and allow to rest, absorbing the juices for 10-15 minutes.
While shredded chicken rests, cut avocados, lettuce and warm canned refried beans and tortillas to complete your taco serving bar!
Gluten Free Option
Want a gluten free option? Opt for Slow Cooker Chicken Tacos sans tortillas, served up as Burrito Bowls. Add Mexican rice to your taco bar set-up. Just substitute 10 ounces of liquid required for your rice with 1 10 ounce can of RO*TEL!
Three Nights of Meals, 30 Seconds of Prep
The Slow Cooker Chicken can be used as the protein for countless recipes. Worried it’s too spicy for your kids? Opt for Mild RO*TEL instead of Original, although both my girls (4 and 2) are fine eating Original. I like to double or triple the recipe above to make leftovers for another two nights worth of meals. Chicken tacos on the first night, King Ranch Chicken Casserole (my hubby’s favorite) on night #2, and these awesome Baked Creamy Chicken Taquitos for the third meal. Alternatively, double either of the above two recipes, and freeze half before baking for an easy freezer meal option at a later date.
