My husband LOVES stuffing. Especially the kind from a box, full of loads of salt. And before hosting my first Thanksgiving last year, it’s what I would make because he liked it and I didn’t know how easy it was to make stuffing on my own. But now that I DO know how easy it is, this Baked Chicken and Stuffing Casserole, with homemade stuffing, is one of our weekly family favorites and the next feature in my Real Mom Meals series.

Baked Chicken and Stuffing Casserole
There are few meals more classic or traditional than chicken and stuffing. But baking, and stuffing, a whole chicken takes way more time and makes way more mess than I can manage with 3 kids under 5, especially during the week when I’m cooking and watching them all by myself.
You can still get the same great classic flavors, however, in this simple casserole, with just 10 minutes of prep, even using homemade stuffing. I like to go this route to control the amount of salt in my family’s food – especially since we are baby led weaning my 9 month old, and he eats what all the rest of us eat.

Basic Ingredients
Homemade Stuffing
12 oz bag unseasoned bread cubes
1 stick unsalted butter
1 small onion, diced
2-3 stalks celery, chopped
1/2 TBSP fresh thyme (or 1/4 tsp dried)
1 TBSP fresh sage, chopped (or 1/3 tsp dried)
1 1/2 cups hot water
Salt and pepper, to taste
Casserole
Homemade stuffing, prepared
2 lbs boneless chicken tenders
1 can low sodium Cream of Chicken soup
Salt and pepper, to taste
Easy Preparation
Preheat oven to 350 degrees, and spray a 9×13 casserole dish with non-stick cooking spray. While your oven warms, prepare your homemade stuffing.
Dice celery, onions and fresh herbs. In a small sauce pan, melt butter. Add celery and onions and saute over medium heat until translucent (about 5 minutes). Remove from heat, and stir in chopped herbs.
Boil 1 1/2 cups water in the microwave. In a large mixing bowl, combine plain bread cubes, sauteed vegetables and herbs, and hot water. Set aside.
In sprayed casserole dish, place chicken tenders in single even layer. Add salt and pepper to taste. Evenly cover with contents of Cream of Chicken soup can. Top with prepared homemade stuffing.
Bake at 350 degrees for 30-40 minutes, or until chicken is cooked through.
Raw Ingredients to Table in Under an Hour
Five minutes of chopping, 5-10 minutes to prep and assemble, half an hour to bake. Serve with some steamed vegetables or a simple side salad, and you have a complete, family-friendly meal from fridge to table in under an hour!
