Quick & Easy Preschool Lunch Ideas – Nut-Free, Kid Approved!

When my oldest first started preschool, the preschool nut-free policy left me scrambling to find things to put in her preschool lunchbox that followed the rules and she would actually eat. She wouldn’t eat lunch meat, and jelly sandwiches didn’t seem to be great nutritionally speaking. So I turned to one of my childhood, Tex-Mex favorites – Bean and Cheese tacos – as inspiration for what quickly became one of our family’s favorite preschool lunch ideas.

Bean and Cheese Roll-Ups

Growing up in South Texas, Bean and Cheese tacos were a dietary staple – an appropriate meal choice for breakfast, lunch or dinner.  They were sold in the hallways of my high school for fundraisers like other schools have bake sales, and from game concession stands right alongside pizza and hot dogs.

For my meat-averse preschooler’s lunchbox, I liked the protein that comes from beans and cheese, but wanted to go a bit healthier than the lard-laden tortillas and refried beans of my youth. I make my kids’ bean and cheese roll-ups with whole wheat tortillas, black refried beans and Heluva Good! Colby Jack cheese from Big Y.

Spread a tablespoon of black refried beans in a thin, even layer over a whole wheat tortilla.

Sprinkle shredded Heluva Good! Colby Jack cheese over the beans.

Place bean and cheese topped tortilla on a griddle over low to medium heat. Warm for 2-3 minutes, or until cheese begins to melt. You can also choose to warm it in the microwave for 30-45 seconds.

Remove from heat, and roll while it is still warm.

Cut them in half to fit in your preschool lunchbox, or slice in smaller pieces for toddlers. The best part? They make excellent dippers, so I use them to get my kids to eat more vegetables too. Serve with homemade guacamole or mild salsa.

Quick & Easy Preschool Lunch Ideas - Bean and Cheese Roll-Ups

Ingredients

Whole wheat tortillas

Black refried beans

8 oz. block of Heluva Good! ® Colby Jack cheese

Instructions

Spread black refried beans on one side of a whole wheat tortilla in a thin, even layer.

Sprinkle with shredded Heluva Good! ® Colby Jack cheese.

Place tortilla on a griddle over medium-to-low heat for 2-3 minutes, until cheese begins to melt.

Remove from heat and roll up tortilla while still warm.

Serve with avocado slices, guacamole, salsa or any of your favorite taco toppings.

Does she like condiments? All my kids will eat almost anything if they can dip it in something – ketchup, guac, hummus, yogurt, jelly. If I can make it dippable, they will eat it!
