It’s Girl Scout season, so it’s easy to find a box of the delightful Thin Mints… but y’all, these are better than that. And better yet, you can make them all year round. Better Than Thin Mints, Chocolate Mint Cookies!
Better Than Thin Mints Cookies
I almost called these ‘Amazing Cookies.’ My husband, who hates having sweets in the house, came home from work the day we made them and ate one while I was still nursing the baby before bed upstairs. He texted me (yes, across the house) to say “Oh my God, these cookies are amazing!” From a non-sweet eater. That’s how good they are.
And they are so easy, my girls basically mixed them up themselves, with just a little help from me to scoop them out on the tray.
Get the flavors you love from your favorite Girl Scout cookies all year round with these Better Than Thin Mints Chocolate Mint Cookies.
Ingredients
1 box brownie mix
3 TBSP flour
2 eggs
1/2 c oil
1 cup chocolate mint morsels
Instructions
Preheat oven to 350 degrees.
Stir extra flour into brownie mix.
Next, mix your oil and eggs until well blended. Add to your brownie mix.
Then, fold in your chocolate mint morsels.
Last, spoon rounded balls of dough onto a parchment lined cookie sheet.
Bake at 350 degrees for 10-12 minutes. Allow to cool on tray before transferring to plate for serving.
I used Ghiradelli Triple Chip brownie mix in this batch, but have also used Betty Crocker mixes with great end result too. Our chocolate mint morsels were Nestle’s Winter limited edition variety – next year, I’m going to have to stock up so I can cook them all year… but you can find mint chocolate chips in many different brands year-round. They just might not have the fun dark chocolate and light green assortment.
The brownie mix makes for the perfect cookie consistency – crispy on the outside, soft and chewy on the inside. All you need now is a big cold glass of milk to pair them with!
