Every year, my husband groans and makes himself scarce when I drag out my KitchenAid mixer for my weekend of Christmas cookie baking. He knows the kitchen is about to be inundated for 2-3 days of flour, powdered sugar, sprinkles and sticky mess everywhere.  But it doesn’t have to be that way.  With a little help from M&M’s® and Pillsbury™ Funfetti®, you can skip the multi-day mess and make Easy Christmas Cookies, made even easier with a chance to win your very own KitchenAid mixer!

Making Easy Christmas Cookies

My traditional family recipe for Christmas cookies requires batter being refrigerated overnight, kneading, lots of flour… then pounds of powdered sugar to make icing that never comes out to quite the right consistency.  With the help of Pillsbury™ Funfetti® Holiday Cake Mix, Holiday Vanilla Flavored Frosting, M&M’s® White Peppermint and M&M’s® Holiday Milk Chocolate, the girls and I mixed, baked and decorated a batch of these Easy Christmas Cookies in just two hours.

I headed to Wal-Mart to pick up all my baking ingredients.  All were easily found in their holiday baking display and seasonal aisle. I also grabbed a gallon of milk as part of The Great American Milk Drive. Give back with your holiday baking this season. Purchase 2 bags of M&M’s® at Walmart (9.4 oz bags or larger) and up to a gallon of milk will be donated to the drive.  More details can be found below.

Yield: 2 dozen cookies

Serving Size: 1 3-4" cookie

Easy Christmas Cookies

Use Pillsbury™ Funfetti® Holiday Cake Mix and M&M's® to bake Easy Christmas Cookies

Ingredients

Pillsbury™ Funfetti® Holiday Cake Mix

2 eggs

1/3 cup butter or margarine, softened

1 tsp vanilla*

Green food coloring (optional)

Flour

M&M's® White Peppermint

M&M's® Holiday Milk Chocolate

* Feel free to substitute peppermint extract for different flavor

Instructions

Preheat oven to 350 degrees and line cookie sheets with parchment paper.

In a large mixing bowl, combine Pillsbury™ Funfetti® Holiday Cake Mix, eggs (beaten), softened butter and vanilla. Mix thoroughly.

If the batter remains sticky, fold in 1/4-1/2 cup flour until dough pulls cleanly from sides of the bowl. At this stage, we added green food coloring to our dough to make our Christmas trees and wreath cut outs, but this is optional.

On a floured surface, roll out dough to 1/4" thickness and cut out cookies.

Transfer to cookie sheets. You can add M&M's® as decoration before baking, as well as after.

Bake for 10-12 minutes, until edges begin to turn golden brown.

Time to Decorate!

The kids love to help decorate.  Using these accordion-style tubes makes it easy. They fit decorative tips like a piping bag, but the kids can use them without worrying about all the frosting squeezing out the back.  They are super easy to fill.  Use a spatula to transfer the Pillsbury™ Funfetti® Holiday Vanilla Flavored Frosting to a plastic bag.  Snip the tip and squeeze the frosting into the decorating tubes.

Easy Christmas Cookies - Decorate after baking with Pillsbury Funfetti and M&Ms

The best part about Pillsbury™ Funfetti® Holiday Vanilla Flavored Frosting?  It comes with its own holiday sprinkles as well.  After piping on frosting to your cookies, apply sprinkles and M&M’s®.  If you wish to fully cover your cookies with frosting, pipe an edge around your cookie.  Then fill with frosting thinned with a few tablespoons of milk.
