No matter the season, occasion or location, my husband’s dessert request is always the same. He wants Key Lime Pie. Fortunately, I’ve become an expert at whipping one up from scratch at home. The ingredients are simple, few and thus, easily manipulable to make all variety of cream pies – including my new personal favorite – Lemon Cream Pie with a chocolate cookie crust.

Lemon Cream Pie Your Whole Family Will Love

Don’t get me wrong – I enjoy a nice cold slice of Key Lime Pie too… just not at EVERY family gathering. After a little experimenting, I’ve discovered you can swap out two of the simple ingredients – the key lime juice and crumbled graham crackers for the crust – with a whole host of different fruit juice and cracker flavor alternatives to make a variety of delectable cream pies.

My latest favorite – that all my mom friends recently adored – lemon cream pie with a chocolate crust. YUM! See the step by step recipe below, or scroll to the end of this post for a printable version.

Lemon Cream Pie with Chocolate Cookie Crust

A cream pie has 4 basic ingredients – condensed milk, flavoring, cream and a graham cracker crust. I started playing with the flavoring and making my own crust to create different flavor profiles. The possibilities are truly endless. My latest favorite? Lemon Cream Pie with Chocolate Graham Cracker Crust.

And I promise it’s easy – so easy, that my kids make it! The only trick to cream pies is making it the day before so it can chill overnight. With just 5 minutes of prep, and 10 minutes to bake, this is one you’ll want to make for every gathering all summer long.

Ingredients

Crust:
1 1/2 cups chocolate graham crackers, crushed
1/3 cup brown sugar
8 TBSP butter, melted

Pie filling:
2 14 ounce cans sweetened, condensed milk
1/2 cup Greek yogurt
1 cup lemon juice

Directions

Preheat oven to 350 degrees.

Combine chocolate graham crackers crumbs, brown sugar and melted butter in a bowl. Mix well, and press firmly into a greased 9″ pie pan to form crust. Evenly cover the bottom and sides.

Next, in a bowl, combine condensed milk, Greek yogurt and lemon juice. Mix until smooth and well blended. Pour into the pie pan.

Bake at 350 degrees for 10 minutes. Then, turn off the oven, and let the pie rest in the oven for 30 minutes. Remove from oven. Once pie reaches room temperature, refrigerate overnight.

Garnish with whipped cream, lemon zest and lemon slices before serving.

Change the Flavoring for Endless Variety

Not a fan of lemon? Swap the lemon juice for strawberry or blueberry puree. Try different fruit and different flavored cookies or graham crackers to find your perfect cream pie combination.
