Big M is on her journey to reading! It is so exciting to watch and her enthusiasm for letters, sounds and recognizing words is contagious. At preschool, they have a letter of the week each week – last week was ‘C week’. She has to bring in a picture that starts with the letter of the week every Monday, and she took a picture of a cupcake… and if you give a 4 year old a picture of a cupcake, it won’t be long before they ask if they can make real cupcakes. Who am I to turn down a learning opportunity? I upped the C-ante for the season, and we made Candy Corn Cupcakes, a perfect Halloween dessert!
Kid-Made Halloween Dessert
The hazard of being a child of a blogger… you start to come up with your own project ideas to contribute. At age 4! Big M made these start to finish herself, with only some help measuring and taking them in and out of the oven. I’m all for encouraging kids in the kitchen because of all the great lessons to be learned, and this recipe is a great one for beginners!
Candy Corn Cupcakes
Ingredients
White Cake Mix
1 1/4 cups water
1/3 cup vegetable oil
3 eggs
Food coloring - yellow and red
White frosting
Instructions
Prepare cake mix as directed. Or in our case, start to prepare as directed, and realize you are out of eggs... Good news is applesauce and baking powder make an excellent egg substitute and a vegan-approved!
Split matter into two bowls, coloring one yellow and the other orange (yellow and red make orange).
Line cupcake pan with liners.
Using a measuring spoon, fill liners 1/3 full with yellow batter. Then, fill another 1/3 full with orange batter.
Finally, frost with white frosting, for your three Candy Corn layers: yellow, orange and white!

Decorating with Kids
A great tip for decorating baked goods with kids? Set them up with frosting on a paper plate and use popsicle sticks for spreading!
