5 Spring Meals to Wow Your Family (But Not Your Waistline)

by Meghan

Spring is officially here… even if mother nature hasn’t seemed to get the memo yet. I don’t know about you, but my body is craving lighter, healthier fare. So get you and your family ready for warmer days, swuim suit season with this week’s Real Mom Meal Plan, featuring lighter, healthier twists on family favorites like pizza and burgers for Spring Meals you all will enjoy.

5 Spring Meals for this Week’s Real Mom Meal Plan

Anyone else suffering from serious cabin fever? There’s still snow on the ground here, but every day a little more melts. And since this week officially marks the start of Spring (and swim suit days are just around the corner), this week features 5 healthy twists on traditional family favorites – tacos, pizza, burgers, pasta and kabobs – that make for lighter Spring meals. Your family will love them, and your waistline will too!

Monday – Grilled Zucchini Boats with Beef

An easy way to go lighter during the Spring and Summer – trade carbs for veggies. We love these grilled zucchini boats from Step Away for the Carbs. All the Mexican flavor of tacos without empty calories from tortillas. Yum!

Tuesday – Shrimp and Asparagus Alfredo Pasta

My kids clamor for noodles every night, this Shrimp and Asparagus Alfredo Pasta from Simple Acres is sure to be a crowdpleaser. While a cream sauce may not be super light, you can lighten it up with this homemade version, trading milk from heavy cream. I love the combination of bright spring flavors like lemon and asparagus too!

Wednesday – Beef or Venison Blackberry Kabobs

Not every family has venison in their freezer from deer season, but if you can get it – it’s an awesome, leaner alternative to beef. And these Venison Blackberry Kabobs are the perfect combination of flavors to make it shine with a quick sear on the grill, a simple BBQ idea for a weeknight dinner. Feel free to substitute beef if you don’t have venison.

Thursday – Salmon Burgers

Want to be healthy and sneaky? If I served grilled salmon on a plate, my kids would question it 8 ways to Sunday. Stick it on a bun and call it a burger and you’ve got a healthy dinner and a happy family! Meaningful Mama shares this tasty Salmon Burger Recipe making a perfect spring meal.

Friday – Healthy BBQ Chicken Pizza

In our house, Friday is Pizza night. And I love this healthy twist on a traditional family favorite from The Soccer Mom Blog. Her healthy BBQ chicken pizza features a sweet potato crust. Make it super easy, and use a store-bought rotisserie chicken for your chicken topping! Quick, easy, healthy and still keeping with the family pizza routine.
