I can’t believe summer is nearly over, and it’s already time to start preparing the kids to head back to school!  We’ve started by stocking our pantry with the Ms’ breakfast, lunch and snacktime favorites.  Wal-Mart and Quaker make that super easy by selling great value packs of the girls’ top picks for cereal, instant oatmeal, and granola bars which provide us with at least a 2 week supply in a single package.

Quaker Instant Oatmeal Muffins

At nearly 2 and 4, the Ms are still fairly picky when it comes to eating.  Their biggest meal of the day is almost always breakfast, so I try to make sure that it is both nutritious and calorific to keep their bellies full until lunch.  Quaker Instant Oatmeal is a popular choice for them both, but often we need something more portable… like muffins!  I use this basic muffin recipe, and combine it with either applesauce and apples and cinnamon Quaker Instant Oatmeal or pumpkin puree and cinnamon and spice Quaker Instant Oatmeal for the perfect combination of back to school, Fall flavors.  I love that it gets a serving of fruit or vegetables in with breakfast too.

Back to School with Quaker Oatmeal Muffins

Prep Time: 15 minutes

Cook Time: 25 minutes

Yield: 1 dozen

Serving Size: 1 muffin

Back to School with Quaker Oatmeal Muffins

Pumpkin or apple oatmeal muffins, perfect for back to school and Fall, featuring Quaker Instant Oatmeal

Ingredients

2 eggs

1 15 oz can pumpkin puree or 1 1/2 cups applesauce

1/2 cup butter (softened)

1 tsp vanilla extract

1 cup flour

2 packages Quaker instant oatmeal

1 cup granulated sugar

1/2 cup brown sugar, packed firmly

1 tsp baking soda

1/2 tsp salt

Instructions

Preheat oven to 375 F. Place cupcake wrappers in regular size muffin pan.

Combine eggs, pumpkin or applesauce, butter and vanilla extract. Mix well.

Sift together dry ingredients, and combine with wet mixture.

Scoop mixture evenly into cupcake wrappers. I use a 1/2 cup measuring cup to evenly distribute batter.

Bake 25-30 minutes, or until toothpick inserted into center of muffin comes out clean.

Makes 12 (1 dozen) regular size muffins.

Both Big and Lil’ M love to help me prepare the batter, and of course, taste test the final product.  Big M declared the apple oatmeal muffins to be “Delicious!” but is partial to her favorite Fall flavor, pumpkin.

I found the Quaker Chewy Bars Variety Pack, featuring 24 assorted S’mores, Peanut Butter & Chocolate Chip, and Chocolate Chunk bars along with a bonus Birthday Cake Bar in the Snacks aisle, next to the crackers and cookies.  “‘Nola bars,” as Lil’ M calls them, are the go-to afternoon snack at our house.  I serve them up along with a piece of fruit to help tide everyone over until dinner time.

Another Back to School Breakfast Option

One of the girls other favorite breakfast options, like many kids headed back to school, is cereal.  However, they still don’t like it served traditionally in a bowl with milk.  Instead, they prefer it as topping on yogurt.  I serve it along with diced fruit over Greek yogurt for a well-rounded breakfast and extra protein!

We definitely love pumpkin everything around here… muffins, pancakes, waffles, pie. One of the best parts of Fall, and it tasted great with the cinnamon & spice oatmeal!
