One of my favorite reasons to meal plan is that you can leverage your efforts from one night to the next. Use ingredients that overlap to buy in bulk and save money. Cook double the protein one night, and use the rest the next to save time. And that is exactly what this Simple Weekly Meal Plan does!  Simple Weekly Meal Plan

This week’s Real Mom Best Meal Plan features three chicken dinners that you can cook all the protein for on Monday in your slow cooker, and reinvent it over the next two days. Then, to add a little variety to your diet, there is a healthy, but hearty soup – my favorite for the cold winter months. And finally, another cold weather favorite, roasted pork with roasted root veggies.

Monday – Slow Cooker Chicken Tacos

At our house, Monday’s require quick and easy dinner, and the crock pot is my go-to. These Slow Cooker Chicken Tacos require literally 30 seconds of prep by lunchtime, and dinner is ready to go whenever you’re ready to eat! For this week’s meal plan, you will want to triple this recipe because you will use the leftover shredded chicken again on Tuesday and Wednesday!

Tuesday – Baked Creamy Chicken Taquitos

I always double (or like this week triple) my Slow Cooker Chicken Taco recipe because 1) it’s so easy and 2) then the next night I can make Baked Creamy Chicken Taquitos. These are awesome for a crowd, game watch, and is one of those recipes you can make in bulk. They also freeze and reheat beautifully too. Serve with salsa, guacamole and sour cream for a complete meal!

Wednesday – Italian Meatball, Potato & Kale Soup

There is nothing more comforting than a bowl of hearty soup on a cold winter day! And this will bring a fun shift from the Mexican flavors you eat the first half of the week. This Italian Meatball, Potato and Kale Soup by Simple Acres features plenty of hearty warm goodness, with a big dash of healthy too. Grab some sour dough rolls to serve alongside it for the perfect, winter meal. Save time by using frozen or prepared meatballs, and you can have this on the table in less than an hour with minimal prep.

Thursday – King Ranch Chicken Casserole

This is a family favorite, and a sentimental one too… it’s the first meal I ever made for my husband back in our college days when we first started dating. King Ranch Chicken Casserole is basically a Mexican lasagna using corn tortillas to define your layers. Over the years, I’ve streamlined and simplified it to make it easy enough to make any night of the week… especially since you already made your shredded chicken on Monday night! I serve it with sliced avocados or a simple garden salad to round out a meal.

Friday – One Pan Pork Loin with Maple-Balsamic Glazed Vegetables

Next to crock pot cooking, one pan meals are high on my list of favorites! And this one has all the perfect winter flavors combined in a single pan. This One Pan Pork Loin with Maple-Balsamic Glazed Vegetables is the best of all winter has to offer. Brown your pork loan, roast your veggies in a scrumptious maple-balsamic glaze, and then put the pork loin back on top and finish it in the oven! YUM!
