No Dye Red White and Blue Cookies

I’m all for celebrating the red, white and blue… all summer long. From decorative stars and stripes banners to festive patriotic food. I just wish the food didn’t always require food coloring. And guess what? Our family’s favorite Red White and Blue Cookies, perfect from Memorial Day to Independence day, have NONE! There is no food dye involved in obtaining your patriotic coloring. Summers of Spunkmeyer

When I was in college, I spent my summer and winter breaks interning at food distributor.  My office was adjacent to the test kitchen, and every Friday, various vendors would be onsite to cook and present new food products to the sales team.  The office favorite was always Otis Spunkmeyer… and there were always extra cases on hand being baked for client meetings.  Imagine working in an office that perpetually smelled like fresh, baked cookies?!?

Red White & Blue Cookies

It’s amazing I didn’t put on 20 pounds every summer.  My first summer, they introduced Red White and Blue cookies.  They were to die for – and being pregnant this summer, I seem to crave everything from back home, including these cookies.  So the girls and I decided to try our hand at our own version yesterday!

Ingredients:

1 2/3 cups flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

3/4 cup butter, softened
3/4 cup brown sugar
1/3 cup granulated sugar
1 tsp vanilla extract
1 large egg

2 cups white chocolate chips
3-5 oz. dried cranberries
3-5 oz. dried blueberries

Directions:

Preheat oven to 375 F.

Combine flour, baking powder, baking soda and salt.  Beat butter, sugars and vanilla until creamy. Beat in egg.  Gradually stir in flour mixture. Fold in morsels, cranberries and blueberries. Drop by rounded spoonful onto greased or parchment lined baking sheets.

Bake for 10-12 minutes, or until edges are golden brown.  Makes 2 dozen 3″ cookies.

The dried cranberries and blueberries can both be found in the dried fruit section, along with the nuts, in your grocery store.

Cook with Your Kids!

My kids love to help in the kitchen – even Baby J at just 19 months old!  I encourage them to contribute as much as they are able given all the opportunities there are for learning in the kitchen.  They all pull up a chair from the kitchen table to stand on at the counter.

Big M now helps me measure.  Lil’ M is great at pouring and getting better at stirring.  And Baby J – he just likes to feel a part of the action. But they are all excellent sniffers and tasters!

These came out as delicious as the Otis Spunkmeyer ones I remembered… and even hubby, who is often skeptical of sweets in general, commented on how tasty they were.  I’m pretty sure this batch will all be gone by the holiday weekend, and I definitely see the need for a second batch for the official weekend of festivities!
